It really is, much easier than regular bread with commercial yeast. It just takes a long time, but I move slowly so that's a good thing.

 

most loaves only have three ingredients - flour, water, and salt.

Yup, you get the starter going, takes a week or so, very simple process. And once it's turned into a healthy colony of wild yeast, you give it a name (mine is Odo), and start baking with it.

 

i keep mine in the fridge so I only have to feed it once a week or so.
