All he has to do is accept the nobility of his Seanchan position and announce his new name as Mat Cauthon.  Then by Her own tradition she would be stuck calling him Mat. ;D :o

I doubt it because she does not currently call him Matrim Cauthon, just Matrim.

According to encyclopaedia-wot Tuon's full name is Tuon Athaem Kore Paendrag, and since she is referred to as simply Tuon I think the renaming to Mat would work just fine.
