inert electrodes like carbon or platinum are used as they don't react with the electrolytes or the products of the reaction

when a salt melts the ions are free to move (and so can carry current and can acts as an electrolyte)

but then as the reaction continues the electrolyte is decomposed

in a salt solution metals more reactive than hydrogen will reduce (ie. above hydrogen)

 

halides will oxidise, otherwise  its OH minus ions
