In esters the OH comes off the alcohol and the H comes off the end of the hydroxide group of the acid, so the Carbon chain of the alcohol bonds with the (single bonded) O of the acid

Hydrolysis of esters is the reverse reaction

it can be carried out in an acid or alkaline solution, though a hot alkaline is preferred

the ester is hydrolysed to an alcohol and a sodium salt of the acid

physical properties depend on IMF

and that depends on chain length and the types of bonds

as well as branching

greater IMF means lower vapour pressure (the pressure the gases above a liquid exert on the liquid's surface)

higher boling/melting points
