when preparing lab rats it is best, after field dressing, to roast them in an open pit without skinning so as to maintain the juiciness of the normally very lean critter.

 

when preparing wild rat, always be sure to wear gloves, handle carefully, and cook very thoroughly, making sure all hair is burned off, to avoid plague and parasites.
