Because, of course, I don't have enough amazing things to make this weekend, right? These all look amazing! I may have to make a few, we're having a gaming weekend this weekend, and celebrating our GMs birthday at the same time. So it's going to be quite the holiday! 

 

The roasted cabbage in particular looks amazing. 

 

I admit that, as much as it's not nearly as traditional in Ireland, being a girl of Irish blood whose family is heavily from New York, I'm a sucker for really well made corned beef. (And being partially Jewish on my father's side, also from New York, Kosher is the best. :wink: Alas, since I can't get that here, I'll need to make my own.) 

 

I will see what fun recipes I can dig up and come back here and post. :smile:

And I remembered, I do have a recipe! And the Sweets thread reminded me of it. Oats (oatmeal porridge, oat bannocks, etc) are very Irish (and Scottish!) So I will share with you my personal recipe for Oatmeal Cookies! 

 

As mentioned in the sweets thread, these are positively stuffed with oats, real oat texture (not 'porridge' texture) and are sweet, indulgently delicious, and the version I'm going to post here is even wheat/gluten free! (But you can use regular wheat flour if that's what you want and they will be just as amazing. Promise). The instructions include some little quirks that do make a serious difference in the cookie outcome. For the better! 

And if you want to make them more Irish, they can always be dyed green, or you can add green chips or something. This cookie is an amazing base for a wide variety of flavors. (I use Butterscotch and White Chocolate in them when I take them to Conventions to share with the staff. They don't last. :wink:

 

LadyWordsmith's OATmeal Cookies

 

Ingredients:
2.5 sticks of butter
1/2 cup white sugar
3/4 cup light brown sugar
1 egg
1 tsp vanilla
1.5 cups of Oat Flour (or regular Flour)
1 tsp baking soda
1 tsp salt.
4 cups Oats (or as much as you can cram in and still mix in completely!) I prefer the Quaker Instant. (Their whole oats are fine, you will get a rougher-textured cookie. Also tasty).

Preheat Oven to 350. Melt butter in microwave. Add sugars and stir. Add egg and vanilla. Stir. Put dry goods in same bowl on top of wet goods and swish around  (or mix in separate dish and add after mixing if you care about that kind of thing). Mix dry goods in with the rest. Add oats and mix. Put on cookie sheets at size desired (they don't really spread at 'all' so you can pack them on there pretty tight). One batch makes about 35-50 depending on how small you make them. Bake at 350 for 9-10 minutes, then pull out. They will set as they cool (don't let them fool you. Cause they won't 'look' done when you pull them out!)

what you need

 new potatoes (1-1/2 lb.)

oz.  (1/2 of 8-oz. pkg.) PHILADELPHIA Cream Cheese, softened
2
Tbsp.  KRAFT Grated Parmesan Cheese
2
Tbsp.  BREAKSTONE'S or KNUDSEN Sour Cream
4
slices  OSCAR MAYER Bacon, cooked, crumbled
2
Tbsp.  chopped fresh chives
make it

 

COOK potatoes in boiling water 15 min. or until tender.

MEANWHILE, mix cream cheese, Parmesan and sour cream. Refrigerate until ready to use.

DRAIN potatoes; cool slightly. Cut in half, then cut small piece from rounded bottom of each. Place, bottom-sides down, on platter; top with cream cheese mixture, bacon and chives.
