I’m here. Sorry been busy getting the studio apartment together. Finally got internet today. There’s like no reception where we are staying. I’ve built a tv stand with a fireplace in it. It’s so fancy. Now the hubby is connecting speakers and surround sound.

I guess you can make tacos around a campfire. I found a recipe online for some campfire tacos. Easy Camp Tacos by Amanda Outside Tacos might be one of my all-time favorite meals. Once the meat is cooked, all you have to do is layer on the toppings and you have yourself an impressive camp dinner! Servings:6 tacos Prep Time:5minutes mins Cook Time:15minutes mins Total Time:20minutes mins Equipment Camp Chef Everest Stove Lodge 10-inch Cast Iron Skillet Ingredients Taco Meat: 1 lb ground beef or turkey 1 white onion (diced) 1 packet taco seasoning mix 1 8 oz can of tomato sauce 1 Tbsp ghee or cooking oil Taco Toppings: flour tortillas sharp cheddar cheese (shredded) lettuce tomatoes avocado cilantro sour cream salsa Instructions Warm a cast-iron pan over the camp stove to medium heat. Add in the ghee or cooking oil followed by the ground beef and diced onion. Break the meat apart with your spatula and mix frequently until the meat has browned. In the meantime, open the can of tomato sauce. After about 5 minutes, add the taco seasoning and the tomato sauce to the beef. Mix until combined. Turn the heat to medium-low and let the beef simmer for about 15 minutes, stirring occasionally. Add water to the mix as needed so that it doesn't dry out or burn. While the meat is cooking, get your toppings chopped and ready. Once the beef is done, assemble your tacos. Layer some cheese, taco meat, and toppings onto a flour tortilla and serve! Notes Don't forget to bring a can opener or buy tomato sauce with the easy-open can. To make things even easier, you can cook the taco meat at home and pack it in the cooler. Then at camp, all you have to do is reheat the taco meat and assemble!

Oh yeah, the taco shells are like the ones from Taco Bell. From the taco trucks or Mexican restaurants, they had the corn tortillas or the flour ones. I do like both types of tortillas.
