It's the first time I've had it. The sauce made it. We have lots and lots of excellent Italian resturants around here.

 

 

we're kind of an italian enclave, but sicilian mainly i think. you may have heard of the big appalachin bust? it was in movies. but they left many good cooks.

i've used those, theyre excellent.

 

i like cherry and chickory too.

 

mostly i like dried woody herbs, cause i got tons.

 

and beer and whiskey in the bottom of the smoker.

May even have to work on that bottle thats been sitting around looking lonely.

but i use my kettle grill for a smoker, so i have some freedom.

 

you brine first or just dry rub?
