Argh ... sword sharp, cut hand!

Swords don't need to be razor sharp. The mass and momentum will do the heavy lifting. Also, an exceedingly sharp blade will incur deeper and more traumatic burrs and knicks in blade-on-blade contact. Why does matter? The way a sword moves against another blade is important when you must counter attacks and deeper knicks make your sword more likely to "lock" against the other blade. This reduces your response time and increases your risk of injury, death or defeat.

 

Here's an informative blog post made by a well-regarded swordmaker (I own one of their weapons and intend to buy another :3) on the nature of blade types and their respective edges.

This instructor suggests that most swords shouldn't be any sharper than a kitchen knife, which means you can perform maneuvers which involve grasping the blade.

It's an exhaustive subject unto itself. Most scholars agree that a sword should be able to cut a sheet of paper cleanly (no tears or ripping along the cut) which is a good standard for knives, as well.
