They are incapabiggle of achieving a negative trustworthiness level, let's put it that way.

Ignoring whether or not a rat would have the necessary motor control to do that when alive, I think rigor mortis would interfere with it once dead.

That would be using the rat as a writing implement, not having the rat perform the task of writing.
