one of my exes still goes on about that time me and my friend karen spent the whole day baking pies together. i don't think there's anything we could have done for him in tandem that would have created a more cherished memory.

*virtually preparing the holiday meal... for personal torture*

 

TG minus 3 - shop, get the turkey defrosted if its frozen and in the brine. collect and dry what's left of the sage, thyme, and rosemary from the garden.

 

TG minus 2 - the pies. there will be pecan, deep dish apple with crumb top, many apples with top and bottom crusts, cherry with sugar lattice crust, sugared, lemon meringue, key lime with whipped cream, pumpkin (which is usually butternut squash), sweet potato, sweet potato chiffon with meringue (all orange pies with JD), blueberry with sugar lattice crust and with two crusts. and whatever else is requested. the prep will all be done today, the baking tomorrow morning.

 

the cakes - mississippi mud cake, fresh apple cake, grand marnier cake, 6 layer yellow cake with chocolate frosting, blueberry lemon coffee cake with streusel topping, and plain and marbled chessecake.

the basic food prep

 

bake the cornbread for the dressing. tear apart the white bread. make the stock for the gravy and cook the giblets in it forthe stuffing.

 

- prep celery, onions, sage, sausage by sauteeing in ungodly amounts of butter and some bacon grease.

 

- peel and cut more poratoes than you ever thought of and set in cold water.

 

- par-cook the yams, cut up, set in the baking dish with butter, brown sugar, karo, and just a little lemon juice.

 

- clean the kettle grill to smoke the turkey

bake the pies.

 

finish the cakes.

 

drain and dry the turkey. butter it and swaddle it in bacon.

 

make a slow hardwood fire in the kettle grill, when burned to grey ash, spread the coals round the outside. put a pan of beer in the bottom.

 

half smother thr fire in the dried herbage and soaked hickory or cherry chips. spray it with beer if it flares. nestle the turkey in a metal cradle in the middle of the smoke. cover and control the heat at 160, and watch it all day, adding smoke as needed and keeping the temp.

 

turley's done when it's 160. which could be any time of the day or night. take it off th gril, cover it and let it rest.

 

this will be the cold smoked turkey.

 

the roast fresh turkey gets covered in bacon, stuffed, and cooked tomorrow morning.

prep whatever veg you're going to try to get people to eat. they want green bean casserole, you got no choice. i do glazed carrots. and something green. someone will bring salad that noone will eat.

 

nobody cares about the veg.

 

cook the cranberry sauce.

 

have a can on hand of the jellied stuff cause some people won't have it any other way.
